Frittatas are the ultimate “use what’s in the fridge” farm-to-table dish. This version celebrates the first asparagus and spinach of the season.

8 eggs
1 bunch asparagus, trimmed
200 g fresh spinach
1 small onion
2 garlic cloves
100 g feta or goat cheese
2 tbsp olive oil
Salt & pepper
Directions
- Sauté onion, garlic and asparagus 5 min. Add spinach until wilted.
- Whisk eggs with salt and pepper, pour over veg.
- Cook 5 min on stove, then finish under grill 8–10 min until golden.
