Simple Asparagus & Spinach Frittata

Frittatas are the ultimate “use what’s in the fridge” farm-to-table dish. This version celebrates the first asparagus and spinach of the season.

Ingredients

  • 8 eggs

  • 1 bunch asparagus, trimmed

  • 200 g fresh spinach

  • 1 small onion

  • 2 garlic cloves

  • 100 g feta or goat cheese

  • 2 tbsp olive oil

  • Salt & pepper

Directions

  • Sauté onion, garlic and asparagus 5 min. Add spinach until wilted.
  • Whisk eggs with salt and pepper, pour over veg.
  • Cook 5 min on stove, then finish under grill 8–10 min until golden.

Notes
