500 g fresh or frozen peas
1 onion
2 garlic cloves
750 ml vegetable stock
Handful fresh mint leaves
2 tbsp olive oil
Salt & pepper
Optional: splash of cream
Directions
- Sauté onion and garlic 5 min.
- Add peas and stock, simmer 10 min.
- Blend with mint leaves until smooth.
