1 sheet ready-rolled puff or shortcrust pastry
1 bunch radishes, halved
1 bunch asparagus, trimmed
150 g soft goat cheese
1 leek, thinly sliced
1 tbsp olive oil + fresh thyme
1 egg (for wash)
Salt, pepper, honey for drizzling
Directions
- Roast radishes and asparagus with oil, thyme, salt at 200°C for 12 min.
- Roll pastry into rough circle on baking tray. Spread goat cheese in centre.
- Top with roasted veg and leeks. Fold edges over.
- Brush with egg wash and bake 25–30 min until golden.
- Drizzle with honey before serving.
