Ingredients

  • 200 g quinoa

  • 1 bunch asparagus

  • 1 cucumber

  • Handful fresh herbs (parsley, dill, mint)

  • Juice + zest of 1 lemon

  • 3 tbsp olive oil

  • 100 g feta (optional)

Directions

  • Cook quinoa.
  • Roast asparagus 12 min at 200°C.
  • Mix everything with lemon dressing and herbs.
